
Cocoa Liquor
The dark-colored viscous extract produced from the grinding of fermented cocoa beans, cocoa paste is a key ingredient in the production of chocolates and alcoholic beverages. Its flavor is often described as bitter and its quality is determined by the ratio of cocoa butter and cocoa liquor. In general, chocolates containing a high percentage of cocoa liquor will be less sweet, more intense in flavor, and darker in color.
